Abstract: Indian Food supply chain is a complex network of various entities which work together to make available the farm produce to consumers in different forms. The complexity of this network is proportional to the product variety, the diverse nature of sourcing, diverse consumer demands and different income profiles. Over the decades there has been a drift towards organized retailers, from being a niche in few Metro cities to being dominant players in the tier 2 cities. As a ripple effect there are changes in the sourcing and procurement of food produce all through the supply chain. At consumer end of the supply chain there is drastic change in the consumer demands, uncertainty in demand and on the other side the farmers face a very high risk in price fluctuation, environmental factors, and government regulations.
