dc.description.abstractTo understand the challenges faced by food retail outlets while scaling their operations in India. 1) Introduction: Indian Restaurant industry is going through a rapid change with the rise of scaling operations both by international food joints and Indian food joints. In India, rising purchasing power is propelling this phase of fast expansion. Some are choosing franchise model and some are scaling via self controlled way. 2) 2) Methodology We primarily focussed on primary research covering over 12+ restaurants. We divided the market into following categories: * Franchise chains * Chain Restaurants * Independent stores We tried to understand the restaurant industry and its scaling problems by covering the following broad topics: * Understanding the supply chain of the stores from ordering to receipt of ingredients * Steps taken to ensure quality and standardization in the stores * Understanding the day to day operations of these restaurants * Major challenges faced by these stores * Advantages and disadvantages of opting for franchise model vs opening your own store * Role of technology in scaling operations * Role of employees and the way they are managed We visited over 12 stores in Bangalore to broaden our understanding regarding the topics above.
